This is a perfect recipe when you are short on time, tired from the holiday rush, or just want a sweet treat. Any recipe that requires only 4 ingredients, very little preparation time, and can be made in a variety of flavors is a winner. The recipe has been around for decades and is known by many names. You may hear people refer to them as Cool Whip Cookies, Cloud Cookies, or Cake Mix Cookies. Whatever you call them, they are soft, chewy, and delicious.
Grab your favorite flavor of cake mix and whip up a delightful treat.
Ingredients:
1-Cake mix
1-8 oz container of Cool Whip (I have used the regular and extra creamy version, and there is no difference in the end product.)
1-Egg slightly beaten
Small bowl of powdered sugar
Instructions:
- Preheat the oven at 350 degrees. Line a baking sheet with parchment paper.
- Place the first three ingredients in a large bowl and use a handheld or stand mixer to combine the ingredients. The mixture will be thick and sticky.
- Use a cookie scoop or spoon and then roll to form a 1-inch ball. I sprayed baking spray on my hands to help keep the dough from sticking.
- Roll the ball in the powdered sugar. Reshape if necessary and place it on the baking tray, spacing them 1.5 to 2 inches apart.
- Bake for 12-15 minutes. At 15 minutes the edge is crunchy and chewy and the center of the cookie is soft.
- Let cool 5 minutes and move to a cooling rack.
