I’m sorry for the length of time between blog posts. Now that things have settled down, I will return to regularly posting content. Before I share a new recipe, let me get you caught up on our transition to Colorado.

A great deal has taken place in the last few months. We sold our home in Texas, and thanks to our former neighbor Sarah, that went very smoothly. After spending a year looking at homes on Zillow, it was time to start looking for our new home here in Colorado. Of course, our home search began in earnest at the exact time that interest rates were high, and there were very few houses on the market that met our criteria. Luckily, we found one with the correct layout for us and knew that, over time, we could transform it into the perfect house. The purchasing and closing process on our new home went smoothly. It was now time to move out of mom and dad’s basement.

We unpacked over a hundred boxes and moved items around multiple times as new furniture was delivered. It is now beginning to feel like a home instead of just a house. Now that our kitchen is set up, I am back to testing recipes.

Sausage, Potatoes, and Vegetable Sheet Pan Meal

Do you need a quick, flavorful dish to add to your meal rotation? Are you new to cooking? Then this is the dish for you. It is easy to prepare and filled with as much flavor as you desire. This dish is cooked in one pan, meaning cleanup is fast, and I love that. I hope you find this dish as delicious as my family does.

Special Notes:

  • You can add spice by using jalapeno sausage or adding pepper flakes. You control the level of heat based on the type and amount of additional spices you use.
  • You can include any vegetables in this dish that you like or happen to have on hand. Depending on what vegetables you select, you may need to cook them for different lengths of time. For example, mushrooms would need to be added later in cooking.
  • Wash all the vegetables before you begin the preparation process.
  • If you use shrimp in this dish, you will want to season them and add them to the pan halfway through the cooking process.
  • This dish pairs well with a green salad.

Ingredients:

  • Smoked sausage, 1 link cut into ½ inch circles
  • 1-pound Brussel Sprouts halved
  • 1 1/2-pound Red Potatoes with skin on, cut into halves or quarters depending on their size.
  • 2 Bell Peppers (Any color works, but I like to use red, yellow, or orange) Cut into thin slices.
  • ½ Red onion sliced
  • Olive Oil (about 1/3 cup)
  • Minced garlic (I use the minced garlic found in the produce section.)
  • Parmesan Cheese (I use Kraft in the green container because it sticks to the vegetables.)
  • House Seasoning to taste (Salt, pepper, garlic powder, and onion powder)
  • Salt and Pepper

Instructions:

  1. Preheat the oven to 375 degrees. Line a large sheet pan with parchment paper.
  2. Add the diced red potatoes, enough olive oil to lightly coat them, house seasoning, and minced garlic in a large bowl. Stir until well coated and spread out on the sheet pan.
  3. Repeat the process with the halved Brussel sprouts.
  4. Add the sliced sausage to the sheet pan.
  5. Add the sliced onion and bell peppers to the bowl and lightly coat these vegetables with the residual olive. Sprinkle with salt and pepper. Place on top of the sausage, potatoes, and Brussel sprouts.
  6. Cook for 45-50 minutes. Serve immediately.
